Job Brief:
We are seeking an Assistant Steward Manager to assist in overseeing the cleanliness, organization, and sanitation of kitchen and dining areas. In this role, you will support the Steward Manager in managing stewarding operations, including dishwashing, cleanliness, and maintaining health and safety standards. You will also supervise the culinary and stewarding teams to ensure safety protocols are followed and guest satisfaction is achieved.
Key Responsibilities:
Assist the Steward Manager in daily operations of the stewarding department, ensuring cleanliness in the kitchen, dishwashing, and equipment storage areas.
Supervise and train stewarding staff on sanitation, safety, and cleanliness procedures.
Ensure compliance with health regulations and hotel standards for sanitation and hygiene.
Promote safe work practices, including proper use of safety equipment such as gloves, goggles, and chemicals.
Address and resolve issues that compromise cleanliness or service standards in a timely manner.
Ensure a high level of guest satisfaction by maintaining cleanliness standards and supporting kitchen operations.
Train team members on the use of cleaning chemicals, safety procedures, and equipment handling.
Monitor and manage cleaning supply inventories, ensuring adequate stock and reducing wastage.
Oversee the maintenance and repair of dishwashing machines, kitchen equipment, and tools.
Supervise proper waste disposal and recycling, adhering to environmental and local regulations.
Collaborate with culinary and food and beverage teams to ensure seamless service operations.
Assist in creating work schedules for stewarding staff and ensure adequate coverage during peak periods.
Prepare reports on inventory levels, equipment status, and operational issues for review by the Steward Manager.
Participate in regular audits to ensure compliance with health, safety, and hygiene standards.
The Ideal Candidate:
At least 4 years of experience in stewarding or kitchen operations, with a supervisory or managerial background.
Strong leadership and team management skills.
In-depth knowledge of kitchen hygiene, sanitation, and safety protocols.
Experience in inventory management and maintaining sanitation equipment.
Problem-solving skills to resolve operational challenges efficiently.
Familiarity with dishwashing equipment usage and maintenance.
Ability to work in a fast-paced, high-pressure environment.
Strong organizational and multitasking abilities.
Good communication and interpersonal skills.
Willingness to work flexible hours, including weekends and holidays.
