The Sous Chef or Assistant Executive Chef is a professional responsible for ensuring that nothing goes wrong in the kitchen. From monitoring ingredients to maintaining an accurate inventory list and ensuring cleanliness everywhere they go, they assist, collaborate and support the Head Chef with everything needed to create dishes for customers.

Job Description/Requirements
Support the Head Chef in the preparation of all food:
- Ensure all food is prepared as per food preparation requirements
- Help in the preparation and design of food menus
- Ensure meals are produced on time, and in sufficient quantities
- Produce high-quality plates, both design and taste-wise
- Supervise daily pastry and bakery requirements as per the menu
- Fill in for the Head Chef where necessary
- Be available for functions as they arise to ensure that the food is prepared and served as required
Supervise all kitchen support staff:
- Ensure all staff are aware of their duties and what is expected of them
- Teach new staff skills they require to perform their roles to the required standard
- Assist in delegating duties to kitchen staff as per the menu requirements
- Monitor the work of kitchen staff to ensure all tasks are done as required
- Ensure the Kitchen operates in a timely way that meets quality Standards
- Resourcefully solve any issues that arise and seize control of any problematic situation
- Give staff feedback on their performance to enable staff development
Manage kitchen stocks:
- Ensure wastage is minimized by careful supervision of food preparation methods
- Ensure proper hygienic storage methods are utilized to prevent food loss
- Monitor the ordering and control of stock levels
- Maintain stock levels of all kitchen supplies
Ensure kitchen staff are working safely at all times:
- Ensure staff are aware of and follow safe work practices at all times
- Assist other staff in the cleaning of the kitchen at the end of the shift
- Ensure his/her own workstation is kept clean and hygienic at all times
- Comply and enforce sanitation regulations and safety standards
Requirements:
- Experience: 2+ Years experience in professional kitchens, mostly Chinese cuisine.
- Ingredient Knowledge: Deep Knowledge of Chinese Ingredients.
- Leadership and Supervision: Experience supervising Junior staff.
- Food Safety: Solid understanding of food safety.
- Ability to contribute to the menu.
- Good organization and communication skills.
